Meatball recipe from Kraft Foods here. Aside from that, I tossed in some parsley and Dinosaur BBQ sauce (which was an excellent idea), and then added a few more crackers to offset the additional liquid.
They're called "volcanoes" because cheese cubes are inserted into the meatballs before baking, so that they bubble and spill out in the process. I used a sharp cheddar cheese, not processed cheese, though, so there wasn't as much explosion as I was expecting. Mozzarella would've been a better choice, but they were really tasty regardless! Served with a simple salad of greens, onion, red pepper, and honey mustard dressing.
