Poached Lemon-Herb Sole

Wanted seafood, and the halibut was way too expensive at the local supermarket. Instead, I bought North American sole with lemon and herbs, and poached the fillets in white wine. Boiled white potatoes and green beans for side dishes, and everything got drizzled in a butter-pepper-chive sauce. I finished cooking just in time to catch the last rays of sunlight outside, so I was able to take this photo out on the back porch. I really really want to spend more quality time on plating and lighting, though. I always feel the rush to not keep other people waiting to eat, or the fact that once I actually get around to taking photos I'm viciously hungry and just want to eat what I've made!
